Meal Planning Madness

I'm loving planning out meals for the week! No more (or hardly anymore) nights of wondering what on earth I'm going to make for dinner and resorting to a PB&J sandwich. It's helping me eat a lot better too. I'm not a big dinner person & would gladly take a bowl of cereal over anything else but this is forcing me to eat better. I'm also learning ways to save money on our grocery bill with coupons & sale items so I'm going to start planning out my meals based on what is on sale in stores and I'm excited to get this whole concept down and save big bucks!

Since Beau works most nights, Ellie & I are the only ones eating at dinner. We both don't eat a whole lot so that means lots of leftovers which also means I don't have to plan meals for each day of the week.. only about 3 or 4 days, which is really nice!

So, for this week my meal plan looks like this:
[These are just dinner meals. Breakfast & lunch I don't plan out]

Monday:
Chicken Broccoli Casserole

Tuesday:
Free (My mom comes to visit with Ellie & I after work every Tuesday & she always brings us food)

Wednesday:
Crock Pot Chicken & Dumplings

Thursday:
Thanksgiving [most likely eating elsewhere...I guess??]

Friday:
Leftovers from Wednesday, or may move Wednesday's meal to Friday. We'll see how things go.

Saturday:
Black Bean Chili

Sunday:
Leftovers

I only have to make 3 meals this week! Lovin' it :)
